Chicken Tortilla Soup

Chicken Tortilla Soup Recipe

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 jalapeno pepper, seeded and diced

  • 32 ounce chicken broth

  • 14 ounce corn, drained and rinsed

  • 14 ounce black beans, drained and rinsed

  • 1 teaspoons chilli powder

  • 1 teaspoon ground cumin

  • 20 ounce crushed tomatoes

  • 1 teaspoon salt, or to taste

  • 1/2 cup cilantro, chopped, divided

  • 1 pound of shredded rotisserie chicken

Tortilla Strips

  • 10 small corn tortillas, cut into 1/4-inch wide strips

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt, or to taste
